- 180 gms Soft Brown Sugar
- 180 gms Sultanas
- 180 gms Cleaned Black Currants
- 150 gms Raisins
- 30 gms Finely Chopped Candied Peel
- 60 gms Cherries
- Finely Grated Lemon Rind of One Lemon
- 1/4 litre Milk
- ¾ tsp Soda Bicarb
- 1 pinch Salt
Instructions
- Grease and line a 7-inch baking tin.
- Brush the lined paper with a bit of butter.
- Sift the flour with salt in a steel bowl.
- Mix in the spices.
- Rub in the butter.
- Add brown sugar and mix.
- Stir in the fruits thoroughly.
- Make a hollow in the centre and pour in the milk, reserving 2 tbsp.
- Stir lightly.
- Warm the reserved milk and pour over soda bicarb. Quickly stir into the cake mixture without beating.
- Pour into the prepared tin.
