Beetroot Chops is a popular street food in Kolkata.
Bengali Beetroot Chops

Ingredients:
Beetroots – 2, peeled, grated
Potatoes – 6, boiled, peeled, mashed
Bread Slices – 4, soaked in water and squeezed
Green Chillies – 4, chopped
Coriander Leaves – handful, chopped
Salt as per taste
Red Chilli Powder – 1 tsp
Amchoor (Dry Mango Powder) – 1 tsp
Oil – 1/4 cup + 1/4 cup
Cumin Seeds – 1 tsp
Ginger – 2 tsp, chopped
Carrot – 2, peeled, grated
Garam Masala Powder – 2 tsp
Roasted Peanuts – 2 tblsp, crushed
Raisins – 2 tblsp
Coconut – 2 tblsp, grated
Cornflour – 5 to 6 tblsp
Water – 1/2 cup
Vermicelli – 1 cup, roasted

Method:
1. Combine the bread slices, green chillies, coriander leaves, chilli powder, salt and mango powder in a bowl.
2. Add the mashed potatoes and mix well.
3. Heat 1/4 cup of oil in a pan.
4. Fry the cumin seeds till it starts to splutter.
5. Add the ginger, garrot, beetroot and saute for 5 minutes.
6. Add the garam masala powder, peanuts, raisins, salt and coconut.
7. Stir well and remove.
8. Make small/medium sized balls of the potato mixture and flatten them lightly.
9. Place 1 or 2 tblsp of the beetroot mixture and roll them again.
10. Flatten them again using the palm of your hand.
11. Mix the cornflour and water in a bowl.
12. Heat the remaining oil in a frying pan.
13. Dip the prepared beetroot tikkis in cornflour and roll them in the vermicelli.
14. Fry in hot oil until golden brown on all sides.
15. Remove and drain excess oil.
16. Serve hot with ketchup.
