A delicious and spicy Thai styled Curry Noodles. Ideal for lunch or dinner, they are tasty and quick to make. Serve with ketchup or a mild sauce.
Ingredients:
Noodles – 200 gms, cooked as per packet instructions
Mushrooms – 6, sliced lengthways
Spring Onions – 2, sliced lengthways
Ginger – 1 inch piece, sliced
Garlic – 4 cloves, sliced
Capsicum – 1, sliced
Onion – 1, sliced
Salt as per taste
Pepper Powder as per taste
Oil as required
Lemon Juice – 1 tsp
Grind together:
Dry Red Chillies – 4
Small Onions (Shallots) – 10
Garlic – 4 cloves
Ginger – 1/2 inch piece, peeled
Cloves – 2
Soy Sauce – 1 tsp
Turmeric Powder – 1/2 tsp
Coriander Powder – 1 tsp
Cumin Powder – 1/2 tsp
Method:
1. Heat oil in a pan over medium flame.
2. Fry the ginger and garlic for 45 seconds.
3. Add onions, mushrooms, capsicum and spring onions.
4. Saute well for 2 to 3 minutes or until onions turn light brown.
5. Add the ground masala and salt.
6. Mix well.
7. Stir-fry till the raw smell disappears.
8. Add the cooked noodles and reduce flame to low.
9. Stir well so that all the ingredients are evenly mixed.
10. Add lemon juice and pepper powder.
11. Stir to mix.
12. Garnish with some spring onions.
13. Serve.
