Ingredients:
Green Beans – 375 gms, trimmed, cut into 1 inch pieces
Coconut – 1/2 cup, grated
Ginger – 1/2 inch piece, peeled, chopped
Mustard Seeds – 1 tsp
Cumin Seeds – 1 tsp
Garlic – 1/2 tblsp, minced
Oil – 2 tbslp
Curry Leaves – 6
Coriander Powder – 1/2 tsp
Turmeric Powder – a pinch
Salt – 1/2 tsp or as per taste
Dry Red Chillies – 2
Lemon Juice – 1/4 tsp
Water – 3/4 cup
Method:
1. Heat oil in a pan over medium flame.
2. Fry the mustard seeds till it starts to splutter.
3. Add the ginger, garlic, cumin seeds, red chilies and curry leaves.
4. Cook for a minute and then add the beans, turmeric powder, coriander powder, coconut and salt.
5. Cook for another 2 to 3 minutes.
6. Add water and cover with a lid.
7. Simmer for 6 to 8 minutes and add lemon juice.
8. Stir once and cook till all water has evaporated.
9. Serve hot.
