Ingredients
- 400 gms Dark Chocolate (chopped)
- 220 gms Butter (unsalted, cubed)
- Eggs (6 large or 8 medium)
- 500 gms Caster Sugar
- 200 gms Maida
- 2 tsp Baking Powder
- 50 gms Cocoa Powder (unsweetened)
- 100 gms Dried Cranberries
- 200 gms Walnuts (chopped)
- Icing Sugar to garnish
Instructions
- Melt the butter and chocolate in a bowl over a pan of simmering water. make sure the bowl does not touch the water.
- Remove and cool slightly.
- Whisk the eggs and sugar until pale and slightly thick.
- Add the melted chocolate to the egg mixture.
- Add maida, cocoa powder, cranberries, walnuts and baking powder.
- Mix well and pour into a greased baking tin lined with parchment paper.
- Place the baking tin in a preheated oven at 180C/360F.
- Bake for 45 to 60 minutes or until nicely crusted but still soft in the middle.
- Remove and cool until firm.
- Sprinkle icing sugar on top.
- Serve.
