Ingredients
- Kovakkai (Tindora - 5 to 6, tender ones, finely sliced or chopped)
- 1 cup Basmati Rice (cooked)
- 1 Onion (small, finely chopped)
- 1 Tomato (small, finely chopped)
- 2 cloves Garlic (small)
- 3 tsp Red Chilli Powder
- 3 tsp Oil - 3 tsp
- Coriander Leaves (handful, chopped)
- Salt as per taste
Roast and Grind:
- 1 Dry Red Chilli (small)
- 3 tsp Bengal Gram Dal
- 4 to 5 tsp Coriander Seeds
- 4 to 5 tsp Coconut (grated)
- 1/4 tsp Asafoetida
- 1/2 tsp Oil
Instructions
- Heat 1/2 tsp oil in a kadhai over medium flame.
- Add the ingredients for roast and grind.
- Stir-fry for a minute and grind them to a fine powder.
- Heat 3 tsp of oil in another pan.
- Saute the onions, tomatoes and garlic for a minute.
- Add red chilli powder, salt and kovakkai.
- Stir well and cover the pan with a lid.
- After 2 to 3 minutes or when the kovakkais are cooked, add the ground powder.
- Mix well.
- Add the rice and stir well.
- Garnish with coriander leaves.
- Serve with papad or appalam.
