This Vietnamese style Shrimp and Mango Lettuce Wraps is a flavourful, healthy and delicious lunchtime meal.
Ingredients:
Raw Shrimps – 20, peeled, deveined
Mango – 1/4 cup, chopped
Carrot – 1/4 cup, chopped
Radish – 1/4 cup, chopped
Olive Oil – 1 1/2 tsp
Lime Juice – 3 tsp
Thai Fish Sauce – 1 1/2 tsp
Brown Sugar – 1/2 tsp
Red Chilli – 1/2 tsp, finely sliced
Lettuce – handful, separated
Coriander Leaves – big handful
Method:
1. Combine the lime juice, fish sauce, brown sugar and red chilli in a bowl.
2. Whisk well.
3. Add the mangoes, carrots and radishes.
4. Stir to mix.
5. Heat oil in a pan over medium flame.
6. Cook the shrimps for 3 to 4 minutes.
7. Add this to the mango mixture and stir once.
8. Keep aside for 5 to 6 minutes.
9. Place the lettuce leaves on a serving bowl.
10. Spoon over the shrimp mixture and garnish with coriander leaves.
11. Serve at once.
