Omelette with Onion, Capsicum and Spinach

Ingredients

  • 6 pc Eggs ( 5 to 6)
  • 1 pc Onion (finely sliced)
  • 1/2 tsp Red Chilli Flakes – 1/2 tsp
  • 1/2 cup Baby Spinach Leaves (chopped)
  • 1/4 cup Tomato chopped (optional)
  • 1/2 cup Capsicum (sliced)
  • Oil (as needed)

Instructions

  • Heat a little oil in a pan over medium flame.
  • Stir-fry capsicum until lightly browned. Set aside.
  • In the same pan, sauté onions in oil for 1-2 minutes.
  • Sprinkle red chilli flakes and stir well. Set aside.
  • In a bowl, lightly whisk the eggs.
  • Heat a tawa over medium flame and pour in some egg mixture.
  • Tilt the pan for even spreading, then sprinkle spinach leaves.
  • Top with onions, tomatoes, and capsicum.
  • Cook for 2-3 minutes until just set.
  • Cover the pan with a lid, increase flame, and cook until golden.
  • Remove, serve, and savor this fantastic breakfast treat.
