Ingredients

  • 200 - 225 g Lobster Meat (cooked)
  • 175 g Spaghetti Pasta (cooked as per packet instructions)
  • 3 tsp Olive Oil
  • 3 tsp Butter
  • 1 small Onion (finely chopped)
  • 1/2 tsp Red Chilli Powder (or Red Chilli Flakes)
  • 200 g Cherry Tomatoes (halved or quartered)
  • Black Pepper Powder (As per taste)
  • Salt (As per taste)
  • 1/2 tsp Lemon Zest (finely grated)
  • Coriander Leaves (Few to garnish)

Instructions

  • Boil salted water, cook pasta until al dente, reserve 1/2 cup water, and drain.
  • In a pan, sauté onions, add tomatoes, cook for 5 mins, then add lobster meat.
  • Stir in red chilli powder, add pasta and reserved water, and season with salt and pepper.
  • Cook until the sauce thickens; garnish with lemon zest and coriander leaves. Serve.
