Irish Coffee is a cocktail made with coffee, Irish whiskey, and sugar. This recipe comes from Foynes Air Base and is sometimes referred to as a Foynes Coffee.

Irish Coffee is a coffee-based hot beverage made with coffee, Irish whiskey, sugar, and cream. It is typically served in a tumbler glass on ice.

The Irish coffee was invented by Joe Sheridan in 1943 at Foynes flying boat station at Shannon Airport. The story goes that a group of cold American airmen were complaining about how badly they needed a hot drink before flying back to New York. Sheridan’s wife, who was working as the station’s hostess, heard their complaints and asked her husband for help. He mixed some of the leftover whiskey from his bar into some black coffee and added brown sugar to sweeten it up. The men liked it so much they began asking for it every time they landed there on transatlantic flights and soon the recipe spread throughout Ireland.
