Best served as a breakfast dish or for evening tiffen.
Ingredients:
Aval (Poha) – 2 cups
Onions – 2, chopped
Tomatoes – 2, chopped
Carrot – 2, chopped
Beans – 6 to 8, chopped
Green Peas – 1/2 cup, shelled
Potatoes – 1 to 2 (depending on size), chopped
Green Chillies – 3 to 4, finely chopped
Mustard Seeds – little
Urad Dal – little
Salt as per taste
Buttermilk – 4 cups
Curry Leaves – handful
Peanuts (or Cashewnuts) – 1 cup, chopped
Oil – 2 tblsp
Method:
1. Soak the aval in buttermilk for 1 to 2 hours.
2. Dry roast the mustard seeds, urad dal and curry leaves for a minute and keep aside.
3. Heat oil in a pan.
4. Saute the onions, tomatoes, carrot, beans, peas and potatoes for 3 to 5 minutes.
5. Add salt and stir well.
6. Stir-fry for another 5 minutes.
7. Squeeze dry the aval and add to the pan.
8. Add salt and cook for 2 to 3 minutes.
9. Remove and cool.
10. Fry the peanuts in a separate pan.
11. Sprinkle over the upma.
12. Serve at once.
