Ingredients:
Papaya – 1/3 cup, peeled, chopped
Guava – 1/3 cup, chopped
Seedless Dates – 1/3 cup
Basmati Rice – 1 cup
Yellow Food Colour – a pinch
Ghee – 3 tblsp
Milk – 1/2 cup
Sweetened Khoya (Palgova) – 100 gms
Sugar – 1/2 cup
Almonds – 1 tblsp, chopped
Cashewnuts – 1 tblsp, chopped
Cardamom Powder – a pinch
Method:
1. Soak the basmati rice for 15 minutes.
2. Add little water to sugar and place it over medium flame.
3. Bring to a boil until it reaches a one string consistency.
4. Pour milk and 1 cup of water into a pressure cooker.
5. Drain the rice and add to the cooker.
6. Pressure cook until 1 whistle.
7. Remove and allow the pressure to reduce.
8. Open the lid and add the sugar syrup.
9. Stir well.
10. Add khoya, cardamom powder and mix well.
11. Heat little ghee in a pan.
12. Fry the cashewnuts and almonds for a minute.
13. Add to the rice.
14. Add the food colour and stir well.
15. Add the fruits and mix well.
16. Serve at once.
